Vegetarian Marinara Sauce Made with Fresh Tomatoes

This sauce is wonderful on pasta, in lasagna, or for anything you looking for a good red sauce for. My family loves it, and is a good choice for your meatless meal choice. EnjoyPhotographer Bill HR

Vegetarian Marinara Sauce Made with Fresh Tomatoes

15 tomatoes
2 Tbsp olive oil
2 large onion chopped
5 garlic cloves chopped
1 c red wine
1 tsp basil
2 tsp oregano 
2 tsp rosemary
2 tsp thyme
salt and pepper to taste
In a large pot, heat olive oil, add the onions and cook slowly, on medium heat until they  caramelize.  Add the garlic and herbs and cook for 5 minutes. add  the 1 cup of red wine and cook for 3 minutes more. Add the tomatoes and their juice and stir to combine. Bring to a simmer and cook on low, stirring occasionally for at least 2 hours, or longer depending on the water content of the tomatoes. The sauce should be thick with much of the water evaporated to concentrate the flavor . Add salt and pepper to taste.
