How To Pickle Okra


Pickled Okra

3 c. Cider vinegar

1 c.  White vinegar

1/2 cup salt, not iodized

2 tsp. Celery seeds

2 tsp. Coriander seeds

8 large. Garlic cloves

4 Tbsp. Mustard seeds

2 tsp. Peppercorns, black

2 Tbsp. Red pepper flakes

3 Tbsp. Sugar

1 Tbsp. dill seed

2 lbs. Okra, fresh

Step 1: Boil Jars. place jars in a large stockpot with water to cover; bring to a boil, and simmer. Place bands and lids in a large saucepan with water to cover; bring to a boil, and simmer. Remove hot jars 1 at a time using jar lifter.

Step 2:  Mix all spices together in bowl. In a defiant bowl mix vinegars together.

Step 3:  Add 2 tsp. Spice mix in bottom of each sterilized pint jar. Pack washed fresh okra as tightly as possible in each jar being careful not to bruise the okra.

Step 4: 1 clove of garlic to each jar

Step 5:  Bring to boil the vinegar, salt and sugar.

Step 6: Cover okra with hot mixture.

Step 7: Seal jars and process in boiling water bath according to jar manufacturer’s instructions. Allow to stand two weeks.

Step 8: Chill before serving.
